Beginning with the inn “Pri Kočerju” in 1908, generations carried forward a passion for hospitality—from the kitchens of Vienna to a renowned inn in Bakar, and later Restaurant Tomi in Portorož. Today, this heritage continues through COB, where tradition evolves into a contemporary and interactive gastronomic experience.
Driven by curiosity and creativity, Filip Matjaž redefines Slovenian gastronomy through a distinctive and deeply personal approach. Despite not following a traditional culinary path, he refined his craft through international Michelin-starred experiences and years of dedication, shaping a unique perspective rooted in both discipline and exploration.
His work reflects a seamless balance of heritage, innovation, and storytelling—where each element is thoughtfully composed to create a meaningful connection between the guest, the dish, and the origin of its ingredients.
